Noma 2.0 Season-Inspired Menu

Menu development in the culinary industry continues to evolve as chefs search for novel ways of creating dishes around the world. One of the most influential chefs when it comes to food innovation is René Redzepi, a Danish chef and co-owner of Noma in Copenhagen, Denmark. Noma is a four-time winner of Restaurant magazine’s World’s Best Restaurant.
When René Redzepi closed Noma at the beginning of 2017, there was a certainty that the International Chef of the Year awardee would return in 2018 to once again deliver a unique dining experience. Sure enough, in February 16, 2018, Noma 2.0 opened, with a winter/spring season-inspired menu with seafood as the star. The restaurant created three menus representing three seasons and featuring ingredients at their peak; as summer approaches, it will change its menu to focus on vegetables and everything that the Noma team can forage from the plant kingdom. From early fall to January, the restaurant will serve meat dishes and other ingredients that grow in the forest such as mushrooms, nuts, and berries.
